Rice flour flat bread spicy savory

This is a traditional dish from telangana also called as Sarva pindi/Ginna pindi/ Thapala chakka/made as evening snack which is crispy in taste and made by rice flour.It is also called as ginna pindi, sarva appa, tapala cakka etc in different places.Today i am going to share step by step making process of sarva pindi.

Ingredients : 

  1. Rice Flour – 2 cups / 250 grams
  2. Sesame Seeds – 1/4 cup / As Required
  3. Peanuts Soaked / Plain – 1/2 cup / As Required
  4. Soaked Chana Dal – 1/4 cup ( Optional )
  5. Green Chilli – 5 to 6 / As Required
  6. Cumin Seeds / Jeera – 1tsp
  7. Coriander Seeds – 1tsp
  8. Garlic – 5 to 6 cloves / As Required
  9. Onion / Spring Onion – 1 cup Finely Chopped
  10. Coriander Leaves – 1 cup Finely Chopped
  11. Curry Leaves – 5 to 6 chopped
  12. oil – As Required
  13. Salt to Taste


Preparation :

  • Soak chana dal and drain water completely.As shown in below picture.
  • Clean sesame seeds,peanuts and remove the peel by crushing . Make sure the peanuts are split otherwise it will be difficult to roast..
  • Coarsely grind green chilies,chopped onion,coriander seeds, garlic cloves, jeera and salt  as shown in below picture.
  • Wash and chop spring onions 
  • In a bowl take rice flour, add spring onions, soaked chana dal, sesame seeds, crushed peanuts, above shown coriander seeds,onion,chilli paste and mix it well.
  • Taste the flour and adjust the seasoning.  You can add little chili powder as per your taste.
  • Gradually add some lukewarm water to make soft dough.  The dough should be like chapati dough.
  • Entire process shown in below pictures..
  • Divide the dough into equal parts as shown in the billow picture.
  • Heat a frying pan or sarva pindi pan ( you can buy it from the market ) and spray it with 1 tsp of oil to roast the sarva pindi.
  •  Take the dough and press it on frying pan use your fingers to make the shape as shown in the below picture.
  • make sure the layer will be thin so it will roast well and crispy .Thinner the layer crunchier it will be.
  • Sprinkle or lightly brush 1tsp oil on the pan or you can pour little oil in holes as shown in picture before put it on the stove so it will not stick to the pan.  
  • Put the pan on medium heat cover it with a lid and let it cook for 5 minutes.
  • Remove the lid and reduce the flame to medium to low heat and let it cook for more 10 minutes or until it turns golden brown in color. Move the pan side to side so that all the sides are evenly cooked.
  • Make sure sarva pindi cook well. Switch of the stove and let the pan cool and repeat the same steps for the rest of the the dough. 
  • Note :
  •  Looks like this is a recipe that is typically done by approximation. One thing that we should remember is the measure, for 1 cup rice flour we need to add 1/4 cup of toppings ( sesame seeds,peanuts, and chana dal ) altogether.
  • Sarva pindi is usually cooked in a wide pan with less amount of oil on medium to low flame. For more crispiness you can use more oil..
